如果你經常路過溫哥華West Broadway,不知道你有沒有注意到接近Oak Street,IHOP餐廳的隔壁,今年春天悄悄出現了一家火鍋店:御上火鍋。

火鍋店開在West Broadway挺新鮮的,除了小肥羊之外,這算是唯二。明明是有點高大尚風範的店名,在我聽來卻是”遇上火鍋”這樣的涵義。是不是親民多了?
約了朋友,帶了兒子前來嘗鮮。

拾級上了二樓,外觀沒有特別裝修,推開鏤空木門,彷如走入江南。左手邊幾根手腕粗枯竹隨意站立,餐廳在竹後的八角木窗等候。不經意抬頭,猛然一驚,白魚如雨自天傾盆而下。木格八角窗意象式地妝點在白牆上,一叢綠竹隱身在斗大店名的白牆後,櫺木圓窗襯在竹林旁,引人進入建築深處。

室內承接入口處的風格,一貫的雅致。明式桌椅搭配古意實木推門;作為隔間,八角窗抬頭可見。一抹天青暈染在案前,靛青的潑墨揮灑在盤碟上,猛一看還以為店家錯放了幾幅山水畫作。兩座白牆的鏤空方格裡也是一只只來自景德鎮官窯的茶杯,或鵝黃或酒紅或草綠。

端坐在火鍋店裡,若不是熱鍋騰騰白煙蒸臉,叫人難以相信不是置身江淮水邊酒肆內,正舉杯暢懷,與友人高聲吟詩作樂。

客人用餐的方式既入世也出世。雖然點了一整桌牛豬魚羊美饌,眾人共食,烹煮時卻是以個人為單位,小鍋細火慢治。

不若其他川式火鍋店,御上的湯底除了兩款辛辣湯底,其他湯底走的是豬雞牛魚的基本款。特色湯底倒有兩款:松茸濃雞湯以及黑松露魚湯。我貪鮮,選了黑松露魚湯 – 上桌時果然飄著淺淺的松露香,不過涮入肉片後,松露被濃郁的肉味遮掩,殊為可惜。友人選的松茸雞湯倒是與眾火鍋料合拍,不論肉、菜、海鮮,松茸獨特的蕈類氣味緊緊相依,始終不散。

菜譜也饒有前朝餘味。口感滑嫩如剛出浴的《貴妃牛》也許聳動,最著名的該屬《千呎羊》了。端上桌時,多達五十多卷的羊肉片鋪陳在長長的木盤上,雖未若其名千呎,長度也夠瞠目結舌的。整體來說,御上的價格與其他火鍋店伯仲之間,但是份量極為慷慨,食材堪稱新鮮,CP值較高。

妙的是,餐廳除了紅白葡萄酒、啤酒,也提供雞尾調酒。我點了杯海明威最愛的mojita,東佐一片五花牛舌,又配一口鮮燙斑點蝦,果然吃出華洋交融的氣味。
